This piña colada on the rocks (shaken, not blended) is a twist on the classic. There's no rum (but you could add a non-alcoholic rum if you wanted), and it's sparkling! This is a variation on a mocktail I had at the Tommy Bahama restaurant in Jupiter, FL. Enjoy!
Ingredients - Makes 2
- 2 oz pineapple juice
- 1 oz coconut cream (can use the coconut fat off the top of a can of coconut milk also)
- 1 oz fresh squeezed lime juice
- 3/4-1 oz simple syrup (we used Root 23 Vanilla Ginger simple syrup)
- ice
- 1 can AVEC Yuzu Lime sparkling water
How to Make This Sparkling Piña Colada on the Rocks
Add all ingredients except for the sparkling water to a cocktail shaker or mason jar and shake for 20 seconds. Pour into two highball or collins glasses, top with crushed ice and the AVEC Yuzu Lime sparkling water. Garnish with lime zest, pineapple pieces or slices, or pineapple leaves.
Note
Our recipe has more pineapple juice than the Tommy Bahama recipe because we found it wasn't enough. You could even add more than the 2 oz listed above.
